They probably do it through a computer, but it seems simple enough to do it without technological aid. After all, several ancient cultures around the world are known to have created "god messages", ie art that can only be seen from above.
Simply take a tape measure and mark off the area you want. From there, use tape or markers to create a grid. Draw the design on a piece of GRID PAPER, then translate it into the land grid. Mark out your areas with brightly coloured flag tape, and plant seeds. Once the plants start growing, remove off-coloured stragglers and remove the flag tape.
